<title>The Old Gin House  - St. Eustatius  ()</title>
<description>
St. Eustatius is a small island located 33 miles south west of the coast of St. Maarten in the Caribbean Sea. On the island you find the famous Quill, which is an extinct volcano. Besides climbing you can also explore the underwater sights by means of scuba diving. Old wrecks, pinnacles and large variety of underwater species can be found in shallow waters off the coast. There are three dive schools on the Island with professional instructors. They offer advanced as well as beginner's courses and regular dives up to three times a day. The marine park protects the waters around the Island. They have won a Carribean Travel and Life Eco award and charge a small fee per dive to upkeep the park.

DINING/RESTARUANTS: The Restaurant is unique by itself. The Chef originates from Belgium where the Culinary art is influenced by the French and of course their own traditions. He has received many awards during his extensive career and has carried a Michelin Star while running his own restaurant in Belgium. He creates a balance between Traditional and West Indian Cuisine and uses a lot of local products.

A great lobster fan himself, he is delighted with the supply and quality he is able to get on an almost daily basis. Every evening a 4 or 6 course dinner is served at the Poolside restaurant along with a selection of a la carte dishes. The wines are carefully selected from throughout the world and form a well appointed list.
